EGGS


An inexpensive and versatile protein source: Eggs*

mixed with:
Cheeses: cheddar, Monterey jack, Swiss
Meat: ham, bacon, sausage, crab, chicken, turkey
Vegetables: onions, mushrooms, broccoli, spinach, peppers

flavored with:
salt, pepper, butter, cream, sour cream, chives, garlic, basil, oregano, Mrs. Dash, Italian seasoning, salsa, ketchup, mayonnaise

coupled with:
rice, pasta, English muffin, tortilla, bagel, pita, sourdough bread, rye bread, wheat toast, potatoes


Eggs are not just for breakfast! Try them as snacks or main dishes, and even in desserts! Here are some recipe ideas for you to expand on:

Traditional:
baked eggs (shirred)
deviled eggs
egg-salad sandwiches
eggs benedict
fried eggs
french toast
hard-boiled eggs
omelets (vegetables, cheese, meat, fruit!)
poached eggs (boiled, no shell)
soft-boiled eggs

other:
angel food cake
breakfast casserole
breakfast pizza
breakfast tacos
cream puffs (pudding or cheesy egg filling)
crepes
egg foo yong
fried rice
frittata (like an open-face omelet)
hollandaise sauce
pasta alla carbonara
pasta pizzas
quiche (chicken, crab, ham, or Lorraine)
scrambled eggs (try in microwave, or as a casserole)
soufflé (cheese, shrimp, or vegetable)
Spanish tortilla (with fried potatoes)
spinach puff


Try some of the above, or just be creative! Eggs make great fillers with meat and cheese dishes, and can give a facelift to leftovers.
