Quiche

1 pie crust (prepare your own, or use a premade frozen one)
3 beaten eggs
1 c. milk
1/4 c. diced onion or green onion (pre-cook, if desired)
1/4 tsp. salt
1/8 tsp. pepper
dash nutmeg
3/4 c. chopped cooked meat (i.e. ham, chicken); OR 6 slices bacon, crumbled
1 1/2 c. shredded cheese (we prefer cheddar)
1 T. flour

Cover pie crust with foil and bake at 450 for 5 mintes. Remove foil, bake 5 minutes more. Pastry will be nearly done. Remove from oven. Reduce oven temperature to 325.

Meanwhile, stir together, eggs, milk, onion, and seasonings. Toss together cheese and flour, then add to egg mixture and mix well.

Pour egg mixture into HOT pastry shell, cover edges with foil. Bake 40 minutes, until knife inserted in center comes out clean. Allow to set ~10 minutes before serving.
