Pie Crust

1 1/4 c. flour
1 tsp. salt
1/3 c. shortening or lard
3-4 T. ice water

Stir togetehr flour and salt. Cut in shortening, until pieces about size of peas. Sprinkle 1 T water over part of mixture, tossing gently with fork. Push to side of bowl and repeat until all is moistened. Form dough into a ball. (may chill or freeze at this point for future use, thaw before using, I hear this causes better results when rolling out the dough, but I haven't observed this personally)

Flatten dough with hands, then roll from cnter to edges, forming a 12" circle. Wrap around rolling pin to transfer to 9" pie plate. Trim or mold edges as desired.
