Poor Man's Sofrito

Sofrito is a versatile Spanish seasoning for beans, meats, soup, and fish. We use it mostly in our beans and chicken. Real Sofrito calls for some specialty peppers, but this is my imitation version:

1 bunch cilantro (wash, use leaves only)
3 medium tomatoes (cut in chunks)
1 red pepper (washed, seeded, cut in chunks)
1-2 green bell peppers
1 yellow onion
~ 15-20 cloves of garlic (minced)

Process onion & peppers in a blender until smooth. Add remaining ingredients and continue blending until smooth consistency (may need to process in batches) Can be kept in the fridge for about 2 weeks. Freeze in 1/2 to 1 c. increments (measure into plastic cups and freez). Once frozen, dump them all into a plastic bag and you have your pre-measured Sofrito ready for recipes!
