Karin's Any-Muffin Recipe

for 12 muffins

combine the following ingredients in a bowl using a wooden spoon - DON'T OVER-MIX, batter will be lumpy, DO NOT use a mixer or you will end up with cakes!

1 3/4 cup of flour (all purpose or whole wheat)
3/4 cup of sugar (adjust according to sweetness of flavoring ingredients)
1/2 cup of milk*
3/4 cup of oil(canola or veggie)
1 cup of flavoring ingredients( fruits etc)
1 egg
pinch of salt
1 teaspoon of baking powder

put one full tablespoon of batter per mold in greased muffin pan.
bake at 400 for 10-15 mins until tops slightly brown.

*depending on fluidity of flavoring ingredients it might be wise to omit milk(i.e. juicy fruits,applesauce) batter should be wet but not watery. Can also substitute milk with yogurt, buttermilk, sour cream or similar milk products.

FLAVOR IDEAS: chocolate chips and vanilla extract; unsweet cocoa powder and vanilla extract (dark chocolate effect); sour cream and vanilla extract; blueberries, cranberries, rasberries( fresh or frozen); Bigger fruits are also good but will have to be cut into small cubes); applesauce and cinnamon; canned pumpkin; vanilla extract and cinnamon, cloves, and nutmeg (all spices ground); raspberries and chocolate chips; ham and cheese; mexican: peppers, cheese and onions; pizza: cheese, tomatoes, italian seasoning

optional: omit the sugar except one tablespoon and add savory ingredients such as cheese,ham, veggies etc.
