You've finished your turkey dinner - Don't trash that carcass! Make your own stock - a delicious and nutritious homemade soup base.
- Pick off as much of the meat as you can
- Dump the whole thing in a huge stock pot
- Add some sliced carrots, celery, and onion
- Simmer for about 2 hours
- Pick off remaining meat
- Pour broth through a strainer or cheesecloth (to sift out any tiny bones)
- Cool and refrigerate, then skim off fat, if desired
