Homemade Turkey Stock

You've finished your turkey dinner - Don't trash that carcass! Make your own stock - a delicious and nutritious homemade soup base.

  • Pick off as much of the meat as you can

  • Dump the whole thing in a huge stock pot

  • Add some sliced carrots, celery, and onion

  • Simmer for about 2 hours

  • Pick off remaining meat

  • Pour broth through a strainer or cheesecloth (to sift out any tiny bones)

  • Cool and refrigerate, then skim off fat, if desired
