Lentil Pilaf


1 c. lentils
3/4 c. long grain or brown rice
1 bunch green onions
1-2 cloves garlic (minced)
2 T margarine or oil
2 3/4 c. chicken stock or broth (or water and 3 cubes boullion)
1/2 tsp. thyme
1/2 tsp. salt
1/8 tsp. pepper

Saute lentils, rice, onions, and garlic in oil until onion is tender (~4 min.). Add the rest of the ingredients, bring to a boil. Reduce heat; cover, simmer 30 min (40 for brown rice) or until all water is absorbed. Makes 6 servings
