Spaghetti Squash

- slice in half lengthwise
- remove seeds and pulp (toast seeds if you wish)
- place cut side down in a baking dish
- prick shell several times with a fork
- bake 30-35 min at 350
use a fork to loosen strands from cooked squash.
scrape strands out of shell

Enjoy with your favorite sauce!
(and lots of parmesan cheese)
Leftovers also good with olive oil, roasted peppers, and ham :)

squash cooks really well in the microwave too, and a lot faster. i usually cut, scrape and cover cut side with plastic wrap, put in microwave cut side up, and in about 3-7 minutes (depending on size/type of squash, just test by sticking a fork in the fleshy part) it's done.
