Homemade Biscuit/Pancake mix

This is great to have on hand for quick meals in the wintertime, and much cheaper than buying a premade mix at the store. I do 1 1/2 - 2 times this recipe and we go through it fast.


mix:
10 c. flour
1/3 c. baking powder
1/4 c. sugar
2 tsp. salt
cut in:
2 c. shortening
until resembles fine crumbs

Store mixture in airtight container.

BISCUITS: (makes about 4)
1 c. biscuit mix
1/4 c. milk
stir until combined, then knead 10 times. Roll out and cut or form in balls and flatten with your hands. Bake 450; 8-10 min.
*optional, mix 1/4 c. grated cheddar cheese with the biscuit mix before adding milk

PANCAKES: (makes about 4)
1 c. biscuit mix
1 beaten egg + 3/4 c. milk
whisk until well blended.
cook on a griddle until golden on each side.
