Crock-pot Baked Oatmeal

Want a nice, easy, warm breakfast for your brood? This is a winner at our house. Get it set the night before and you only have to switch on your crock pot in the morning when you first get up. It will be ready by the time everyone is up and dressed!

1/4 c. canola oil
1/3 c. sugar
2 eggs, beaten
4 c. quick oats
3 tsp. baking powder
1 tsp. salt
1 1/2 c. milk

Grease Crock pot bottom and sides with the oil
Add remaining ingredients and mix well
Cook for 30 min.
Unplug slow cooker and leave soaking overnight.
Turn it on again in the morning and bake another 30-40 min.

It will be almost cake/bread-like. Add desired toppings (i.e. raisins, bananas, roasted chopped walnuts, craisins, honey, syrup, brown sugar, cinnamon, dried apples). Serve in bowls and pour a little milk over it. Enjoy!

Leftovers reheat well the next day.

*note: adapted from "Fix-it and Forget-it Cookbook", I felt the original recipe had too much oil and sugar (originallly called for 2/3 c. oil, 1 c. sugar), it also has you cook it for 2 1/2+ hours, but who gets up that early before breakfast?
