Oatmeal cookie PANCAKES*

1 c. oats
1 c. flour (let me know how it turns out if you try wheat, I use white)
1/2 c. brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
2 oz. (~ 1/4 c.) chopped walnuts
--> mix dry ingredients in a large bowl

3/4 c. sour cream
3/4 c. milk
2 large eggs
1 tsp. vanilla
1/4 c. butter (melted)
--> whisk in wet ingredients until just combined

2 bananas, mashed
3/4 c. raisins
--> fold in final ingredients
Cook pancakes on buttered griddle ~1/3 c. batter each, turn when bubbles form on top, cooks about 2 min. per side.

drizzle top with syrup or honey if you wish!
Great for breakfasts, leftovers make a good snack for life on-the-go.
