Cloth Diaper Choices

I have been using cloth diapers for the last 3 1/2 years. I also used them 10 years ago, for the first year of V's life. So, altogether I have 4 1/2 years of experience.

Over the last decade, cloth diapering has exploded in popularity. When V was in cloth diapers, I didn't know another soul who used them. Now, even though I moved halfway across the country away from the granola capital of Austin, TX, I still run into other users of cloth diapers. Hurrah!

I'm not sure whether cloth is becoming more popular because there are more options, or if there are more options because they are becoming more popular - but I'm glad either way! Back in the old days, when the grandparents used cloth, they only had rubber pants to cover the diapers. Most people probably used flats, which is basically a big square of absorbent birdeye weave cloth. 10 years ago, I used Chinese prefolds with diaper pins and covers. I tried pull-ons, which were the cheapest, but they didn't adjust around my baby's skinny legs. I also tried ajustable velcro and snap covers. They gave me a much better fit, simply by their adjustability. I also tried wool soakers, especially for overnight.

When I decided to go back to cloth, when S was a few months old, I jumped right in with prefolds and bought some Bummis velcro covers without even thinking. I also was intruduced to the Snappi (a plactic device for holding the diaper snug without pins) and totally loved it. By the time he was potty trained, I was already diapering little A. I decided to branch out and try some other options. I tried Thirsties velcro covers, which worked comparably with Bummis, and I got some Flip adjustable covers. They are a bit cheaper than some other adjustable size covers, but I am not able to get a tight enough fit around my baby's skinny legs, so they are not my favorite. I do like that they fit my 4 month old and can also fit my 2-year-old in a pinch!

I am notoriously frugal, so I have mostly stuck to prefolds and covers rather than sized diapers, pocket, diapers, all-in-ones, etc. I do use disposables a lot at night because my babies have sensitive skin, are heavy wetters, and disposables fit better under pajamas then cloth diapers.

I recently purchased some BumGenius onesize pocket diapers and am ready to put them to the test. So far, I can tell you they do fit both M, at 4 months and A at 25 months (though admittedly, A is petite). They fit snug around the waist and legs and haven't leaked yet. They do need a little more particular care than prefolds. They need to be washed every 2-3 days in a special detergent (one free of phospates and other chemicals). Detergents such as Rockin' Green are sold where cloth diapers are sold. This is my first foray into other types of cloth diapers and I look forward to trying out several types on my little guinea pigs :)

Veggie Beef Pasta

This recipe is a mixture of 2 similar recipes from different sources 1-1 1/2 lb. ground beef (cooked in a large skillet, drained), remove meat from pan and set aside

cook until soft:
1 T canola oil
1 large onion (diced)
4 cloves garlic (minced)

add, bring to boil (about 10 min):
3 1/2 c. beef or chicken broth
3 c. pasta (I like rotini or farfalle)
1 tsp. each basil, oregano, thyme
2 cans diced tomatoes (kind with Italian seasoning, or add some extra seasoning)

next add veggies and cook to desired doneness (about 7 min): (in above picture I used some of each)
4 c. diced zucchini OR 4-5 c. brocolli florets

then return meat to pan and warm through.
Serve topped with plenty of parmesan cheese or shredded cheddar cheese :)

Mexican Rice

pictured with all 4 veggie options and some cooked chicken. I also add a little salsa with the meat when I put in chicken.

1 c. rice
1 T oil
1/2 c. chopped onion
1 tsp. Knorr chicken and tomato seasoning (for soup)*
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. cumin

vegetable options:
- frozen peas and grated carrot
- chopped green pepper and corn

Heat oil on medium and saute rice until light brown. Add onion and cook until softened. Add 2 c. water, seasonings, and choice of vegetables. Cover and bring to a boil for 5 minutes. Reduce heat to simmer for another 20-25 minutes.

*Alternate I've used for Knorr tomato seasoning: 1 cube chicken boullion and a packet of Sazon Goya con culantro y achiote or cilantro y tomate

1/2 c. brown sugar
1/2 c. butter
1/4 c. shortening
1 egg
1 tsp. vanilla
1/3 c. flaxseed meal
1/4 c wheat germ
1 1/2 c. oat flour
1/2 c. whole wheat flour
1/2 tsp. baking soda
1/2 tsp. salt
6 oz. choc. chips (I use Girardelli 60% cacao)

mix wet ingredients, add dry, combine. form on cookie sheet.
bake 8-10 min at 375.
cool slightly before removing from cookie sheet.

Tuna Fish Burgers

4 cans tuna fish (=20 oz) (or salmon)
3 T mayo or miracle whip
1/2 c. breadcrumbs
1/3 c. chopped green onions
1 egg, beaten
1 T lemon juice

Preheat oven to 425.
Mix all ingredients thoroughly and shape into patties on a foil lined baking sheet sprayed with cooking spray.
Bake about 15 min, turning once at around 8 min.

(Makes 6-8 burgers)
We like this with lentils and rice.

Healthy Baby Home Party

A while ago I applied to host a Healthy Baby Home Party, sponsored by Stonyfield Organic Yogurt and Seventh Generation. It was supposed to be last month, but since I was out of town all month, we had to have our party in August.

First, I invited a bunch of moms with babies (some were also pregnant). I think we had 8 moms and 18 kids - a great crowd!

As per the party kit: we watched a video, played a Bingo game, and wrote postcards to congress about the importance of establishing safety standards for chemicals marketed for household use. We had 4 moms win prizes (free products!) and everyone went home with coupons and samples! I have a few left, so a few lucky neighbors will get some too.
To give it my own flavor, I decided to do a waffle brunch. We had lots of yummy food. My favorite toppings are still strawberries and ice cream, but we tried some new ones : peanut butter and chocolate peanut butter! Yogurt is yummy too!

And of course we let the kids cool off! (water is a must for summer parties in Texas!)

Simple Peanut Butter Granola

4 c. oatmeal
3/4 c. honey or corn syrup
1/2 c. oil
1/2 c. peanut butter (mixes easier if you microwave until smooth)

Mix all ingredients and bake in a shallow pan at 300 degrees for about 30-40 min. (stir after 20 min.)
Allow to cool and store in an airtight container.
Enjoy with milk for a yummy breakfast or snack.

Lentil Pilaf

1 c. lentils
3/4 c. long grain or brown rice
1 bunch green onions
1-2 cloves garlic (minced)
2 T margarine or oil
2 3/4 c. chicken stock or broth (or water and 3 cubes boullion)
1/2 tsp. thyme
1/2 tsp. salt
1/8 tsp. pepper

Saute lentils, rice, onions, and garlic in oil until onion is tender (~4 min.). Add the rest of the ingredients, bring to a boil. Reduce heat; cover, simmer 30 min (40 for brown rice) or until all water is absorbed. Makes 6 servings

Marinara Sauce

Marinara Sauce *

2 1/2 c. chopped onion
20 cloves garlic (minced)
1/2 c. canola or olive oil
~10 lbs. canned tomatoes with juice (whole, crushed, or diced)
3 T. Italian seasoning
2 1/2 tsp. salt
2 1/2 tsp. pepper

Use a large (8+ qt.) stock pot to cook onion and garlic in oil until tender (not browned).
Stir in remaining ingredients.
Bring to boiling.
Reduce heat and simmer (15 min. - 1 hour).
(Process in a food processor or blender if it is too chunky for your family's tastes)

Cool and put in freezer containers in quantities appropriate for your family. (chill before freezing)

Other Ideas:

-Add a can of tomato paste if you like it thicker
-Add chunks of green pepper
-Add pureed veggies
-Add browned ground beef

* This is a HUGE batch of sauce. I usually make it right before making up some lasagnas and then freeze the rest for pasta. I use this for pizza sauce as well!

Eat from the Pantry Challenge

For the month of January, I intend to take part in the Eat from the Pantry Challenge posed by MoneySavingMom and FishMama. I don't think this will be so hard for us because we have a lot of food stocked up. This summer we spent very little on groceries because I was not sure if we were going to move and I needed to use up my supply. We never ran out of food! But we did get bored with it. This year we also don't know whether or not we will be moving, so I need to really get a grip on how long it takes us to use up our stock of food and not over-stock! Here are the specific goals I am setting for myself for January:

1. Spend no more than $50 on groceries for our family of 7 --That is a quarter of our normal budget (caveat: we have 2 children that participate in the WIC program, and we will still be getting all of their foods included in that program).
2. The foods I purchase will be perishables (primarily or exclusively produce)
3. Organize and use up much of the food from our chest freezer, especially meat and milk (yes I have milk in my freezer right now)
4. Go through all of my cupboards, shelves, and pantry and find out what's really in there! (perhaps create an inventory?) - Then use it!
5. Try new recipes with our staple ingredients.
6. Make only 2 shopping trips.

Anyone else need to clean up some excess in their pantries? Want to join in the challenge? Don't worry - you are allowed to set your own rules!

REPOST: Makeover for leftover Turkey

Making a Turkey this Season? Get them when they are cheapest, the week of Thanksgiving. Once you've cooked it up, there are a lot of fun ways to disguise leftovers over the next few weeks. Please share your favorite ideas in the comments, or leave a link to your own post.

Barbecue: Shred 2 c. dark meat and dump in a ziplock bag, pour in some barbecue sauce. Freeze for later use. Later, thaw in your fridge. Heat on the stove, adding more barbecue sauce if desired. Serve over rice, noodles, toast, or a roll. (works with light meat too, but dark meat tastes better). I love this on a whole-wheat pita with alfalfa sprouts.

Easy Enchiladas: Heat in a large saucepan: 1 can cream of chicken soup, 1 tsp. chicken boullion, 1/2 c. sour cream, one can mild Ro-tel tomatoes, 1 1/2 c. shredded cheddar cheese. Reserve 1 c. for topping. To remaining sauce, mix in 2 c. diced turkey. Pour filling in several tortillas, roll up and place seam side down in a greased 9x13 glass baking dish. Cover with remaining sauce, and an additional 1/2 c. cheddar cheese if you wish. Bake until warm and bubbly. About 30 min. at 375.

My children's school has several confirmed cases of ringworm. Thought I'd share with you what I've learned.

Counterintuitively, Ringworm is not an actual worm infection like pinworms. Ringworm is actually the name of a highly contagious fungal infection.

It is spread by contact with an infected person or something they touched. It is a red, itchy rash that usually manifests in a circular shape, with normal-colored skin in the middle. It often becomes crusty.

It is related to athlete's foot and jock itch and is treated with the same type of over-the-counter creams such as Lotramin or Tinactin. To treat, twice a day wash the area with soap and water, pat dry, apply the cream, and cover with a bandage (to avoid spreading the infection to others). This must be done for 3-4 weeks while the infection heals. Keep the as area clean and dry as possible.

Damaged skin that becomes cracked and irritated can also develop a secondary bacterial infection, which will need to be treated.

FYI: Pinworms

For all you parents out who, like me, had no experience with parasites. I present to you the infamous PINWORM:This is probably the most common human parasite, especially among small children. They are tiny little worms that live in the digestive tract.

About a month or two after infection, they come to maturity and you may start to see symptoms. This basically consists of intense itching of the anus, particularly at bedtime. Irritation can develop into a bacterial infection. It starts when the fully grown female worms (pictured above) crawl out at night and lay eggs on the skin. The eggs are then spread from the hands, clothing, bedding, etc. of infected persons. They can even become airborn. The eggs can survive up to about 2 weeks outside a host. After ingesting the eggs, the child may become reinfected, or infect others (particularly those they come in close contact with at home or at school).

Diagnosis is made by seeing a pinworm, or eggs collected on scotch tape (viewed under a microscope). Although thoroughly disgusting, they are not considered a serious infection since they do not cause any other problems besides itching. The itching can keep your child up at night. Fortunately, they are easy to treat. One pill will kill the worms (some doctors will treat twice, a second dose 2 weeks after the first).

Then you have to wash everything regularly to get rid of the eggs:
- daily laundering clothing, bedding, and towels in hot water
- wash toilet seats twice a day
- at treatment, thoroughly clean rugs, floors, furniture
- shower child first thing each morning
- keep child's fingernails short and clean
- do not share towels, sheets, etc.
- enforce rigorous hygiene!
